1976

A&M Cheese began shredding cheese in a small warehouse on Upton Ave. in Toledo, Ohio with the use of a small vertical mixer a multipurpose machine. The machine was used to create our first blend nicknamed 2+2 was 50% provolone and mozzarella.

 

1980

-A&M purchased a machine from Indiana that took blocks of cheese and processed them into a diamond shaped diced product. Our next popular blend was named the Detroit blend with a mix of muenster and mozzarella.

- Misto D’oro cheese blend was developed and introduced. This would eventually become our most popular cheese blend. It is distinguished by it’s distinctive flavor and golden color which is the result of a proprietary four cheese blend. The blend was perfected and tested in actual pizzerias using different types of ovens popular in the pizza industry.

 

 

 1990

- A&M moved from Upton Avenue to Belmont Avenue in Toledo, Ohio. 

- Purchased a horizontal packaging machine.

- Purchased A&M's first vertical packaging line.

 

 

 

 

2000

- Equipment was purchased to accommodate 8 oz. retail shreds with resealable bags.

- HACCP and Critical Control Point programs were implemented to ensure that maximum efforts in sanitation and food safety were being used.

 

2005

- Ground is broken on a new state of the art cheese processing facility located at 243 Waggoner Blvd.  Planned new construction would be 18,200 sq. feet and would feature new packaging and processing rooms as well as 38 refrigerated docks to ensure that the cold chain is not compromised during receiving of production. This facility would open the door for A&M to process 30,000,000 lbs of cheese per year essentially doubling their production at the time. 

 

2006

- A&M moves into it's new state of the art cheese processing facility.  

- Annual AIB International (American Instate of Baking) audits begin along with HAACP certifications.  A&M has maintained high approval ratings ever since.  HAACP certifications led to being added to a list of approved suppliers for the US Armed Forces.

 

2011

- A&M Surpasses 500,000 lbs per week in production.

 

2014

- A second production line is added replacing the vertical machine, along with a new shredder, and case packer.

 

2017 - Present

- A second vertical shredding line is added and the our old packaging machine is retired.

- A&M processing surpasses 60,000,000 lbs of cheese per year.
